Why I Support The Youth Grow Program 

A Letter From The Chef...


Growing up, we had limited access to high-quality foods and fresh ingredients, until my grandmother stepped in. Juanita sparked my culinary creativity through gardening and creating dishes using our own harvest of tomatoes, key limes, potatoes, and squash.

Together with the abundant corn, chiles, and tortillas in our traditional Mexican household, we created many memories. This childhood gardening experience set me on my path to culinary school and I began my early career cooking for Hollywood movies and TV shows in Los Angeles before moving to PDX.

Then the pandemic happened... In 2020, while working as a catering chef at Adidas, I was laid off, this is when I began plotting my award-winning taquito business.

Tito's Taquitos, pays homage to the simple ingredients I grew up eating and know well. It's also a tribute to my late stepfather Margarito ~ better known by the community as “Tito”, who loved taquitos and for whom our food cart is named. Before he died, Margarito always encouraged me to open a restaurant devoted to his favorite dish.

Tito's Taquitos serves hand-rolled potato taquitos and hand-pressed tortilla tacos with perfectly balanced desserts in Southwest Portland, all out of a food cart. Focusing on simple traditional Mexican ingredients, Tito’s Taquitos is celebrated for its flavorful recipes and unassuming dishes that are accessible to the community.

But I find the greatest joy in creating our vegan options, with mushrooms grilled like carne asada, chickpeas marinated ala al pastor or hibiscus flowers braised in the style of birria.

The taquitos at Tito’s are a tribute to my childhood memories and Mexican culture. I can honestly say that I poured my heart into these recipes. It's important to me that I share my lived experience through the dishes I create. And I can tell this comes through to our customers proving that, Tito was right.

I look forward to sharing my story with you at dinner two of Chef In Your Garden in support of the amazing work of the Youth Grow program.

  • Mushroom Aguachile - mushrooms marinated in a lime chile sauce tossed with cucumber, onions, and cilantro.

  • Shrimp Ceviche - Poached shrimp, marinated in lime, and tossed with onions, tomatoes, limes, cilantro.

  • Choice of 4 Hand Rolled Taquitos or (3) Hand Pressed Tortilla Tacos Made With Beef, Chicken, OR Garbanzo Bean Al Pastor
